About the Recipe
I was inspired to start making these bread crumbs so I could enjoy Oyster Dressing, a traditional holiday dish in my family and still be compliant with my commitment to plant based whole food diet plan. I wanted and needed bread crumbs that are low carbohydrate, no salt, no preservatives, and only healthy fats that work with my diet plan.

Ingredients
Low Carb Bread
Fresh Sage
Fresh Rosemary
Garlic cloves
Green Onion
Lemon zest
Extra virgin olive oil
Preparation
Step 1
THE BREAD:
One 18-ounce loaf of low carbohydrate bread. Â
Cut the slices of bread into approximately one-inch square pieces.

Arrange on a tray and dehydrate in the oven. I use he default dehydration setting on my oven which is 151degrees F for 10 hours.
After the bread is dehydrated, crush the bread by hand.  I find a mortar and pestle gives the best results.  I do not use a food processor or any other electric appliance because the crumbs are too fine.  I think the texture of the mortar and pestle is perfect but it does take longer.
Step 2
THE SEASONINGS:
1-container of fresh Sage, leaves only, finely chopped
1-container of fresh Rosemary, needle like leaves only, finely chopped
The zest of 3 lemons finely chopped
7 slender green onions finely chopped
3 cloves of garlic minced after being put through a garlic press.
Step 3
Add each of the seasonings one at a time to the bread crumbs stirring thoroughly so that there is no clumping of the ingredients.  Once all the ingredients are added, using a hand pumped oil sprayer, mist the crumbs with extra virgin olive oil and stir.  To avoid clumping. keep slowly misting and stirring the crumbs with the olive oil until the bread crumbs are coated to your liking with olive oil.Â
Step 4
Let the mixtue sit overnight, so that the moisture from the seasonings is absorbed by the bread crumbs. If you want to dehydrate the bread crumbs the next morning so they are more like store bought crumbs you can. I usually don’t. Â

Remember these bread crumbs do not have any preservatives so they will not store very long. Â
